Cheesecake-filled Pumpkin Cake Roll



Pumpkin Cake Roll with Cheesecake Filling

This cake is amazing, especially during autumn, Thanksgiving and Christmas.

Ingredients for the Cake:
  • 3 eggs
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 2/3 cup canned pumpkin
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 cup flour
Ingredients for the Filling:
  • 1 package cream cheese (8 oz), softened
  • 4 Tbsp butter, softened
  • 1 tsp vanilla
  • 1 cup powdered sugar

Directions:

Make the Cake:


Preheat oven to 350 deg F. Prepare a 10x15 baking pan by spraying with Canola oil or any non-stick cooking spray. Then line it with parchment paper and set aside.

In a medium-to-large mixing bowl, add eggs, sugar and vanilla. Beat well.

Add canned pumpkin, baking soda, cinnamon and flour. Continue to mix.

Pour mixture into baking pan. Spread evenly using a spatula. If necessary, tap pan on counter top a few times to remove air bubbles.

Bake in oven for 15 minutes or until a toothpick inserted in the center comes out clean.

While cake is baking, place a clean, wax/parchment paper on your counter and cover with powdered sugar.

When cake is done, remove from oven and let cool for a couple of minutes on a wire rack and then turn upside-down on top of the wax/parchment paper.

Carefully remove the parchment paper (the one that baked with the cake). Roll the cake with wax/parchment paper inside. Allow to cool completely.

Make the filling:

In a medium to large bowl, add cream cheese and butter. Beat well.

Then add vanilla and powdered sugar. Beat together and then set aside.

Putting it all together:

When your cake is completely cool, carefully unroll it. Begin spreading the cheesecake filling evenly over the cake. Gently roll the cake back up, this time without wax/parchment paper.

Wrap in plastic wrap and refrigerate or freeze it. Pumpkin roll cuts easier when it is cold or slightly frozen.

Trim off the ends to make it prettier and dust with powdered sugar.
