Banana Chocolate Chip Cookies

Awesome Banana Chocolate Chip Cookies

Ingredients:

Cookies -
  • 2 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup butter (room temperature)
  • 1/2 cup granulated sugar (white)
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas
  • 1 cup chocolate chips

Glaze -
  • 4 tsp water
  • 2/3 cup powdered sugar
  • 1 tbsp creamy peanut butter

Directions:

Bake the Cookies -

Combine flour, baking soda, salt, and cinnamon in a bowl and whisk together.

Using bowl of a stand mixer (e.g. Hamilton Beach 6 Speed Classic Stand Mixer), cream butter and sugars until light and fluffy. Add egg and vanilla and beat until well mixed. Add bananas and chocolate chips. Slowly add dry ingredients with mixer on low and beat until well blended. Scape down mixer bowl as best as possible. Place dough in refrigerator for an hour.

Preheat oven to 375 deg F.

Scoop a spoonful of dough on a greased baking pan. Repeat until all of dough are used up. Bake for 8-12 minutes until lightly browned. Cool cookies to room tempreature before drizzling with the glaze.

Make the Peanut Butter Glaze -

In a bowl, mix water, powdered sugar, and peanut butter. Stir ingredients completely until smooth. Pipe glaze to cookies by puting mixture in a small Ziploc bag and cut a small tip at one of the corners.
