Cakes with Alcohol: Amaretto Cream Coffee Cake Recipe



Amaretto is added to both the filling and cake for a bittersweet flavor. Serves 8-10.

Easy Amaretto Cream Cheese Coffee Cake

For the Cake:
  • 2 1/4 cups all-purpose flour
  • 3/4 cup sugar
  • 3/4 cup cold butter, cubed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg, lightly beaten
  • 3/4 cup sour cream
  • 1/4 cup amaretto
For the Filling:
  • 8 oz. cream cheese, softened
  • 3/4 cup granulated sugar, divided
  • 1 egg, lightly beaten
  • 1 teasponn amaretto
  • 1 can (21 oz) cherry pie filling

Directions

Preheat oven to 350 deg F.

Make cake dough by mixing flour and sugar in a bowl. Cut in butter until pea-sized crumbs begin to form.

Set aside 3/4 cup of the crumb mixture for later use. Blend baking powder, baking soda, salt, egg, sour cream, and amaretto into the remaining crumb mixture to make the cake dough.

Press and form dough into a 9-in springform pan with removable bottom. The sides should be about 1-in up from the bottom.

Make filling by beating cream cheese and sugar for about 1 minute. Beat in egg and amaretto until well combined.

Spread evenly over cake dough. Pour pie filling on top. Use crumb mixtures that were set aside to top off the filling. Spread evenly.

Bake in oven for 60 minutes or until center is set. Remove from oven and cool on a wire rack. Remove sides and let chill in refrigerator before serving.
