Triple Chocolate Cupcakes

Cupcakes
  • 1 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 cup cocoa powder
  • 2 eggs
  • 1 tsp salt
  • 1 cup milk or water
  • 1 tsp vanilla extract

Pre-heat to 350 degrees F.

Sift flour, baking powder, baking soda, cocoa powder, & salt.

In another bowl (i.e. Pyrex Mixing Bowl Set), cream butter and sugar, add eggs one at a time, and stir in vanilla. Add milk and alternate with flour mixture to this bowl. Beat mixture until thoroughly blended. Fill muffin tins and bake for 18-20 minutes.

Frosting
  • 2 cups confectioners sugar
  • 6 tbsp cocoa powder
  • 6 tbsp butter
  • 4 tbsp milk
  • 1 tsp vanilla extract

Sift together sugar and cocoa.

In a large bowl, cream butter, then beat in the sugar mixture while alternating with milk. Blend in vanilla and beat until light and fluffy.

Top off each cupcake with chocolate chips. Serve
